We loved this coffee so much, we brought this year's harvest back! Lovely balance to this one with the perfect notes for winter, chocolate, apple and cherry.
Notes from the importer, Soma:
'The Morales Family is one of the pillars of La Cooperativa Asuncion. Senora Morales is the leader of the Copperative, and active as the head of administrative duties, and a point of communication between the Cooperative, and the Guatemalan exporting bodies.
The regional farms are located in San Jose Poaquil, an ideal coffee growing "paradise". Ranging from 1950-2100 MASL, this mountainous region grows plenty of wild coffee just waiting to be picked.
The Cooperative recently built a wet mill that is available for all members to use. Collectively, they pick Catuai, Typica, and some Bourbon. The cherries are pulped in new fermentation tanks, and are sent to dry on patios via channels that are cleaned regularly.'
