We fell for this coffee back in August and honestly, it was love at first sip. Sweet berry notes kick things off, followed by juicy peach and a swirl of lavender that feels like a floral high‑five. It all wraps up with a bright pop of citrus that’ll have you thinking, “Yep… I need another cup.”

About the farm

Perched in the upper Bruselas district of Pitalito, Huila, La Primavera stands at the heart of one of Colombia’s most celebrated coffee landscapes. Its six hectares nurture nearly 25,000 trees, thriving in rich volcanic soils and a microclimate of warm days and cool, misty nights. This exceptional environment—combined with decades of coffee tradition—creates the perfect stage for standout varieties like Pink Bourbon to express their full potential.

About the producer

Behind this coffee is José Oliver Galíndez, a true innovator and respected leader within Huila’s specialty‑coffee community. As an early U.S.–trained cupper and a Cup of Excellence judge, José brings world‑class sensory expertise to every step of production. His hands‑on curiosity and commitment to experimentation—especially in processing and farm‑level machinery—allow him to craft coffees that consistently rise above expectations. His work embodies the perfect fusion of experience, precision, and forward‑thinking vision.

About the Coffee Process

This Pink Bourbon lot showcases José’s dedication to flavor‑driven craftsmanship. Only cherries picked at peak ripeness make the cut. After harvest, the fruit undergoes a carefully calibrated 12‑hour fermentation, followed by a secondary mucilage fermentation and a meticulous double wash. The result is a clean, vibrant cup where altitude, variety, and microclimate shine through in every sip—an elegant expression of Huila’s signature profile.
